The last thing any person wants after a hectic and exhausting day is to spend another hour in the kitchen. I went there also,--particularly on those busy weekdays when you need a hot comforting meal, but you do not want to put in the extra pains. The good news? You will still be able to have delicious and homemade dinners without having to spend a lot of time and prepare them.


In this post, I am going to provide 10 simple 15-minute dinner recipes, which are ideal on a stressful weeknight. These are easy, yummy and are made with common household foodstuffs that you are likely to have at home. You can be alone, you can cook yourself, or you are simply tired of making effort with your food, either way, you will find these recipes much more palatable and they will make your evenings much easier.


Masala Omelette Wrap


Fast and light meal high in protein content.

Ingredients: eggs, onions, tomatoes, green chilli, salt, pepper, roti/paratha.

How to make:

Whisk up the eggs and sliced vegetables and spices. Prepare it like an ordinary omelette and stuff it into a roti wrap it and eat. This is among my favorite meals when I get home hungry and would need something at hand.



Veggie Upma


A comforting South Indian meal and ready in a short time.

Ingredients Rava, veggies, curry leaves, mustard seeds, salt.

How to make:

Mustard and curry leaves Saute veggies. Add roasted rava and water. Bake a couple of minutes till tender.

Upma is plain, cozy and can be used at any hour of the day.


Garlic Butter Noodles

Children love it, grown-ups love it--it is a world-wide favourite.

Ingredients: Noodles cooked, garlic, butter, flakes of chilli, salt.

How to make:

Add butter and garlic to the boiled noodles. Season and serve.

You may include vegetables or paneer and make it healthier.


Paneer Bhurji

Eat with roti, bread or even pav.

Ingredients: paneer (crushed) and onions, tomatoes, turmeric, chilli powder.

How to make:

Onions and tomatoes are sauteed, spices are added, paneer is added, and this is cooked within 3-4 minutes.

This meal is reminiscent of a restaurant-made meal without the time and efforts.


Lemon Rice

An ideal South Indian dish within minutes.

Ingredients: Left over rice, mustard seed, peanuts, curry leaves, lemon juice.

How to make:

Take a basic tempering, add rice, lemon juice and your dinner is made.



Moong Dal Cheela

Light and healthy dinner that will not feel heavy.

Ingredients Onion, coriander, moist spice, moong dal batter.

How to make:

Moong dal has to be soaked then blended into a batter. Spray like a dosa, and add veggies and cook.

Certis is a complete meal served with green chutney.


Quick Veg Pulao

A wholesome one-pot meal.

Ingredients: Pre-cooked rice, pile of veggies, whole spices, ghee, salt.

How to make:

Fry spices and vegetables, add rice, cook several minutes.

It is perfect when you need something warm and flavourful but fast.


Tomato Poha

Light, tangy, and filling.

Ingredients Poha, onions, tomatoes, turmeric, lemon.

How to make:

Onions and tomatoes are sauteed, poha is softened, spices are added, and lemon is added.

This is superb in case you are in the mood of having a home-type meal.


Instant Masalas Rajma Boiled (with Boiled Rajma)

A shortcut dinner hack!

Ingredients: Spices, tomato puree, rajma that is boiled, and garlic.

How to make:

Add garlic + tomato puree + spices; Boiled rajma is added; and simmered on 5 minutes.

Serve with rice or roti. Flavors like it were like slow-cooked rajma.


Aloo Capsicum Stir-Fry

A famous sabzi within a flash of a moment.

Ingredients: Potatoes (cut in thin slices), capsicum, spices (basic).

How to make:

Fry potatoes then stir in capsicum, cook some minutes with spices.

Comes along with paratha, roti or even bread.


Final Thoughts

Preparing a meal daily does not necessarily mean that it is stressful. It only takes you 15 minutes to prepare good meals with a little planning and few ingenious shortcuts. The recipes are ideal whenever one is busy with work, family or studies. Test them, combine and change ingredients and modify spices according to your preference.
